Sugar Spiced Nuts


Happy New Year, you guys!  I hope everybody had a fantastic time over the holidays!  I had a nice, long visit with my family and completely lost my mind eating cookies, brownies, on sale holiday candies and chocolates.  I probably had more rice and noodles in the past two weeks than the last few months combined.  I was a woman possessed.  Nothing containing a smidgeon of carbs was safe from my bottomless maw, including these sugar spiced nuts.  These were so addictive it should be everybody's new year resolution to have a secret stash hidden in some dark kitchen cupboard.

Sugar Spiced Nuts

1/3 cup dark brown sugar
2/3 cup white granulated sugar
1 teaspoon kosher salt
generous pinch of cayenne pepper
1 teaspoon ground cinnamon
1 egg white, room temperature
1 tablespoon water
1 pound nuts (walnuts, pecans, almonds, etc.)

Preheat oven to 300ºF.

Mix sugars, salt, cayenne, and cinnamon.  Beat egg white with water until frothy but not stiff.  Add nuts and stir until coated.  Sprinkle in sugar spice mixture and mix until evenly coated.  Spread nuts in single layer on a sheet covered with parchment paper.  Bake for 30 minutes, stirring occasionally.   Remove from oven and separate nuts as they cool.

Happy New Year to you too! As usual, beuatiful photos. I can't believe that you only use natural light for them. Time to work off all those carbs? See you at the gym!
